Tomato and Feta Pasta

  • Recipe for one, two as an accompaniment

Ingredients

  • 1/2 red onion(most nutritious
  • of the onion family)
  • 2 ripe tomatoes
  • 1 garlic clove
  • 75g feta cheese
  • Handful of fresh basil
  • 1 tsp red/green pesto
  • Black olives
  • Salt and pepper
  • Olive oil
  • Brown spaghetti (75g/person)

Speedy method

‘do in stages if kids under your feet!’

  1. Put pasta on to cook in a non-stick pan
  2. Meanwhile, chop tomatoes into chunks and leave to one side. Finely chop onion, chunk feta and tear up basil
  3. Drain pasta, leave in a colander. In pasta pan, put a little olive oil and lightly fry the onion. When soft, add tomatoes, garlic, basil, pesto and S&P. Flash fry until soft (not mushy!!).
  4. Add the pasta back to the pan with the Cheese and loosely mix. Turn off heat and leave a lid on until ready to serve. (Don’t leave it too long!)
  5. Serve with a green salad or crusty bread
