Super Speedy Fishy Pasta

Sit down, chill out and have a cold beverage as this is dead easy and dead quick!

  • Serve with a salad or crusty bread
  • Some parmesan/grated cheddar on top won't go a miss either!
  • This recipe serves 2-3 depending on appetites!

INGREDIENTS

Pasta (preferrably brown)
Packet of king prawns (150g ish)
Smoked Salmon (shredded) - small packet amount
200ml tub low fat creme fraiche
1 onion (chopped)
Squirt of lemon juice
Parsley (chopped)
Salt and pepper

METHOD

  1. Cook Pasta. Meanwhile, chop onion, parsley and shred salmon.
  2. In a separate pan shallow fry the onion in a bit of lemon juice, when soft add the prawns and salmon.
  3. Drain Pasta, put back in the pan and add all remaining ingredients including fish and onions, with some more lemon juice (taste first).
  4. Make sure its hot enough and serve!

Prawns and Salmon

Excellent sources of selenium, protein, Vit.D, Vit.B12, niacin and of course omega-3 fatty acids. Both are recognised promoters of cardiovascular and brain health. With the Vit.C from the lemon juice and carbohydrate of the pasta, this is an excellent meal post-exercise when the thought of cooking drains the last bit of energy you had left!
