Orange and Apricot Flapjack

The lowest fat flapjack ever!!! and sooo more-ish!

INGREDIENTS:

200g Dried Apricots (chopped)
100g Raisins
400ml Fresh Orange Juice
200g Oats
50g Sunflower seeds, or seed mix
3 tblsp Light muscovado sugar
Zest of one lemon
1 tsp Ginger powder

METHOD:

  1. Place Apricots, raisins and orange juice in a pan. Bring to the boil then leave to simmer for about 30mins, or until the majority of the liquid has been absorbed.
  2. Add the sugar to the pan and stir until dissolved.
  3. Remove from the heat and add the remaining ingredients.
  4. Peheat oven to 180degC and line a non stick circular tin (about 20"diameter) with grease proof paper.
  5. Bung in mixture and level with a spoon or spatula and cook for 30mins.
  6. Leave to completly cool before cutting (this helps it stick together).

These are completly gorgeous and I defy you not to eat them all in a week!

They are however high in sugar and therefore make excellent pre/post exercise snacks but be carefull if you are trying to lose a few pounds.

  • Dried Apricots have less Vit.C than fresh but still have a concentrated supply of iron, potassium and Beta-carotene
  • Canned fruits are less nutritious and if packed in light syrup contain double the calories.
