The lowest fat flapjack ever!!! and sooo more-ish!
INGREDIENTS:
200g Dried Apricots (chopped)
100g Raisins
400ml Fresh Orange Juice
200g Oats
50g Sunflower seeds, or seed mix
3 tblsp Light muscovado sugar
Zest of one lemon
1 tsp Ginger powder
METHOD:
- Place Apricots, raisins and orange juice in a pan. Bring to the boil then leave to simmer for about 30mins, or until the majority of the liquid has been absorbed.
- Add the sugar to the pan and stir until dissolved.
- Remove from the heat and add the remaining ingredients.
- Peheat oven to 180degC and line a non stick circular tin (about 20"diameter) with grease proof paper.
- Bung in mixture and level with a spoon or spatula and cook for 30mins.
- Leave to completly cool before cutting (this helps it stick together).
These are completly gorgeous and I defy you not to eat them all in a week!
They are however high in sugar and therefore make excellent pre/post exercise snacks but be carefull if you are trying to lose a few pounds.

Dried Apricots have less Vit.C than fresh but still have a concentrated supply of iron, potassium and Beta-carotene

Canned fruits are less nutritious and if packed in light syrup contain double the calories.
