HRT Cake*

HRT Cake‘or bird food bread as my dad calls it!’

  • 100g Soya Flour
  • 100g Wholewheat flour
  • 200g raisins
  • 100g dried apricots
  • 100g dried cranberries
  • 100g porridge oats
  • 100g linseeds/flaxseeds
  • 100g sunflower seeds
  • 100g pumpkin seeds
  • 50g flaked almonds
  • 2-3 pieces stem ginger(chopped)
  • 500ml soya milk
  • 1 tbsp malt extract (warmed)
  • 1tsp nutmeg, cinnamon, ground ginger

Method

  1. Mix up all dry ingredients.
  2. Add milk, malt extract and leave to soak for 30mins.
  3. Line a loaf tin with grease proof paper and bung in mixture **
  4. Bake @ 190degC for 90mins.

Nutrition

  • Nuts and seeds not only contain essential omega-3 fatty acids but most are also concentrated in vit.E, manganese, copper, magnesium and zinc.
  • Zinc is a common deficiency and provides us with vitality.
  • Soya has been found to alleviate symptoms associated with the menopause hence why a number of professionals in the world of alternative medicine recommend a slice a day as a preferred alternative to HRT.
  • Flaxseeds - alleviate constipation and bloating
  • Sunflower seeds - have the highest nutritent levels out of all nuts and seeds
  • Pumpkin seeds - Maintain prostate health
  • Stem ginger - thought to help with menstrual cramps

You don’t have to be menopausal to enjoy it! I love it and am hopefully a long way from the menopause!

* Don’t panic, there’s no HRT in it! And no, the boys won't grow boobs.

** It does look gross but tastes great when cooked. I’ve started being cheeky and toasting some and putting a dollop of jam on top! I imagine clotted cream would go really well but you didn’t hear that from me ;-)
