Classic Bruschetta

  • A very light but satisfying and low calorie option
  • Not to be eaten on a first date...

INGREDIENTS:

2 pieces of granary/spelt toast
Dribble of olive oil
2 ripe tomatoes (chopped)
1 clove garlic (less if in company of others)
Handfull of basil or coriander (chopped)
Salt and Pepper

METHOD:

  1. Chop everything that needs chopping and put bread* in toaster
  2. Put chopped ingredients in a pan and flash fry until softened
  3. Season
  4. Dribble some oil on the toast and plonk everything on top of the 2 slices
  5. Devour!

ACCESSORIES:

  • Red pepper, Mushrooms, Red onion, Spinach (chop and add at last minute)                               
  • Goats cheese, Ham, Bacon, Poached egg, Tuna
  • Sundried Tomatoes, Olives, Anchovies, Chilli

A bit on Olive Oil:

  • The more flavour and colour in olive oil the healthier and,
    Extra Virgin Oil is less refined and therefore is more nutritious
     
* Bread goes in a toaster, not toast silly
