INGREDIENTS:
2 pieces of granary/spelt toast
Dribble of olive oil
2 ripe tomatoes (chopped)
1 clove garlic (less if in company of others)
Handfull of basil or coriander (chopped)
Salt and Pepper
METHOD:
- Chop everything that needs chopping and put bread* in toaster
- Put chopped ingredients in a pan and flash fry until softened
- Season
- Dribble some oil on the toast and plonk everything on top of the 2 slices
- Devour!
ACCESSORIES:
- Red pepper, Mushrooms, Red onion, Spinach (chop and add at last minute)
- Goats cheese, Ham, Bacon, Poached egg, Tuna
- Sundried Tomatoes, Olives, Anchovies, Chilli

* Bread goes in a toaster, not toast silly
