Albran Cake

These are purfic for when you're in a rush and just need a quick pick-me-up. Full of protein, omega-3 fatty acids, monounsatured fats, Vit. E, copper, manganese, magnesium and zinc, Granola bars form an ideal part of a healthy, well balanced diet....just don't eat the entire batch! (if anyone does, do let me know what happens!)

INGREDIENTS: (makes about 16)

8oz Porridge oats (jumbo or rolled..or both)
4oz Light brown sugar
2oz Flaked almonds
6oz Raisins
2oz Sesame seeds
2oz Linseeds
2oz Pumpkin seeds
4oz Sunflower seeds
4oz Melted butter
3tbsp Honey

METHOD:

  1. Place all ingredients in a bowl and mix like mad until everything is coated. The mixture will appear quite loose but shouldn't be stodgy and gluey.
  2. Preheat oven to 180degC
  3. Line a 1inch deep backing tray (12-14x9inches) with baking parchment and plonk in the mixture. Use the back on a spoon or your hands to squash the mixture right down so it is well stuck together and flat in the tray.
  4. If you have a Rayburn/Aga, place tray on bottom shelf to allow the bottom to crisp up and leave for 25mins. If it is a conventional oven, put in the top and leave for 35mins.

Personally, I like to make sure these are slightly burnt round the edges to give a real caramalised flavour...your taste buds may disagree though so keep a watch!

*At tip here is to use a rolling pin when you take them out to squish the mixture right down again. Leave to cool for 10mins, then cut them roughly, then leave to cool on a rack for however long they take to cool. They can be quite crumbly so dont waste - gather up the crumbs, put in a bag or pot and sprinkle over yoghurt or porridge!

NUTRITIONAL INFO:
Many people are concerned about eating nuts and seeds because they view them as high fat foods. In fact, in order to optimise our health, we need fat and nuts and seeds supply copious amounts of the "good-fats" such as omega-3s and monounsaturates.
Benefits include:
  • Improved Cardiovascular health
  • Lower Cholesterol
  • Stabilised blood sugar
  • Great for satisfying your appetite
